Make it at Home: Irish Mojito

Happy St. Patrick’s Day! Nothing celebrates this Irish holiday more than a green-colored cocktail by the pool! Here at Sunscape Resorts & Spas, we like to celebrate with all things green–even our Mojitos!

Dreaming of sipping on an Irish Mojito! Book your stay at Sunscape Resorts & Spas and you will get a Shamrockin of savings! This is exclusive offer will only last for three days!






Irish Mojito

fresh lime juice, about 1/2 lime
small handful of fresh mint leaves
1 1/2 ounces Bacardi Limon
2 teaspoons granulated sugar
club soda, just a splash
green food coloring (one-two drops)
Garnish with a lime wedge

1. Squeeze half a lime into a shaker. Add mint leaves. Muddle together using a muddler or the end of a wooden spoon. Add Bacardi, sugar, a few drops of green color and a handful of ice. Place lid on shaker & shake.

2. Strain drink into a martini glass. Top off with a splash of club soda. Add the lime wedge for garnish, and serve.

Make it at Home: Mango Salsa

At Sunscape Resorts & Spas, we love finding new and innovative ways to prepare fresh food for our guests. We take pride in our team of immensely talented chefs, who never fail to deliver a wonderful meal. In fact, we’ve found one of their recipes for mango salsa that we would love to share with you! Feel free to add this deliciously simple dish to the table at your next gathering!

Mango Salsa 

2 small ripe mangos, skin and pit removed, chopped
1 small avocado, skin and pit removed, chopped
1 firm Roma tomato, seeds removed, chopped
2 tablespoons yellow onion, minced
1/2 cup cilantro, chopped
1/8 teaspoon salt
1/4 cup roasted green chile, stem and seeds removed, diced
Juice of 1/2 one small lime

The directions? Simple: Just combine all of the ingredients, let sit for 1 to 6 hours and serve!

Make it at Home: Grilled Mahi Mahi with Caribbean Spiced Habanero Peach Butter

Do you ever dream about bringing home the taste of some of the fresh seafood served at Sunscape Resorts & Spas back to your dinner table? Now you can with this recipe for spicy and savory mahi mahi. This particular plate pairs the distinct flavors of the mahi mahi fish with a unique sweet and spicy fusion of habanero and peach. Here’s a step-by-step guide for creating this delicious dish!

Mahi Mahi Ingredients:

2 medium garlic cloves, minced
½ medium red onion, minced
½ tbsp. ground red pepper
1 tbsp. fresh, ground black pepper
1 ½ tbsp. mild paprika
½ tsp. dried thyme
½ tsp. dried oregano
½ tsp. dried basil
4 mahi mahi fillets (6 to 8 oz. each)
4 tbsp. habanero-peach butter


Habanero Peach Butter Ingredients:

2 tbs. olive oil
2 habanero peppers or 4 jalapeno chiles, minced
½ medium red bell pepper, minced
½ medium shallot, minced
6 tbs. balsamic vinegar (do not substitute)
1 tbs. honey
3 large ripe peaches, unpeeled, pitted and sliced
¾ lb. unsalted butter, softened

Peach-Habanero Butter Directions: 

  1. Directions for the Habanero Peach Butter:
  2. Heat the oil over high heat in a medium saucepan.
  3. Add the chiles, bell pepper, and shallot; cook over high heat for 2 minutes.
  4. Add the vinegar and honey to the chile mixture, reduce the heat to low, and simmer until almost all the liquid has evaporated, about 3 minutes.
  5. Remove from the heat; cool.
  6. Place 2 of the peaches and the butter in a food processor or blender.
  7. Process until well mixed.
  8. Add cooled chile mixture to the butter puree, and process until well blended.
  9. Transfer the butter mixture to small bowl.
  10. Mince the remaining peach, add it to the butter mixture, and blend well.

Mahi Mahi Directions:

  1. Preheat the broiler.
  2. Combine the garlic, onion, red pepper, black pepper, paprika, thyme, oregano and basil in a shallow bowl. Mix well.
  3. Dredge the fillets in the spice mixture, coating both sides well.
  4. Place the fillets onto a foil-lined baking sheet.
  5. Broil 4 inches from the heat, turning once until the juices begin to run (approximately 7 minutes).
  6. Garnish each fillet with 1 tbsp. of the habanero-peach butter.
  7. Serve immediately.

Make it at Home: Havanna Lights

We like to make our readers feel like they can be whisked away to a tropical island at any time. This fruity and refreshing cocktail is a guest favorite at Sunscape Dorado Pacifico Ixtapa and with just one sip you’ll immediately feel like you’re in paradise.

Havanna Lights Recipe 


  • ¾ oz of light rum
  • ¾ oz of coconut rum
  • ¾ cup of pineapple juice
  • A few drops of grenadine syrup
  • ½ oz of Melon liquor


  • Shake together the light rum, coconut rum and pineapple juice.
  • Pour the mixture into a cocktail glass.
  • Add a few drops of grenadine into the glass carefully so it drops to the bottom.
  • Top the drink with the melon liquor.
  • Garnish with a pineapple crown leaf and enjoy!

Make it at Home: Mexican Hot Chocolate

With the holidays right around the corner, everyone loves to enjoy a warm cup of hot chocolate this time of year. Here at Sunscape Resorts & Spas, we love to treat our guests to authentic food and drink around the holiday and we want our readers at home to enjoy the same experience!

Here is a delicious Mexican Hot Chocolate recipe that will put a “kick” into your holidays!

Mexican Hot Chocolate

Mexican Hot Chocolate

2 cups reduced-fat (2%) evaporated milk
1/2 cup whole milk
1/2 cup chocolate liqueur
1 teaspoon vanilla extract
1/4 cup sugar
1 tablespoon unsweetened cocoa
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ancho chili powder
10 cinnamon sticks
1 dried red chile
2 1/2 ounces bittersweet chocolate, broken into pieces
1/4 cup heavy whipping cream




Whisk evaporated milk, whole milk, liqueur, vanilla, sugar, cocoa, 1 teaspoon of cinnamon and chili powder in a heavy saucepan. Add 2 of the cinnamon sticks and chile and cook gently over medium-low heat until warm. Add chocolate and cook, whisking until melted. Gently bring to a high simmer; reduce heat and simmer until liquid thickens and reduces slightly, whisking often, 10 minutes. Combine heavy cream with remaining 1/2 teaspoon cinnamon and beat until peaks form. Ladle 1/3 cup hot cocoa into each of 8 teacups; top with 1 tablespoon whipped cream and garnish with a cinnamon stick.

Drink of the Day: Blue Mojito

Are you suffering from the end-of-summer blues? With fall just a few days away, it’s no surprise that many people may be feeling a little down about summer being officially over. To ease your troubles and help you cope with the transition into a new season, we wanted to share the recipe for one of our favorite blue drinks at Sunscape Dorado Pacifico Ixtapa–the Blue Mojito!

Blue Mojito


– 1 oz. HPNOTIQ liqueur
– 2 oz. Light Rum
– 3 oz. Club Soda
– 6 fresh mint leaves

What to do: 

Mix ingredients in a cocktail shaker. Pour in a collins glass over ice, add mint leaves and enjoy!

Make it at Home: Fish Tacos

Our guests at Sunscape Resorts & Spas rave about our fish tacos. That’s why we wanted to share this quick recipe with you so you can make this yummy dish at home. We guarantee they’ll be a crowd pleaser!


1 lb fresh fish fillets (Cod, Mahi Mahi or any other white fish)

Salt and Pepper

Olive Oil

1 dozen corn tortillas

Salsa (homemade or store bought)

1 Avocado



Soak the fish in cold water for one minute then pat dry with a paper towel. Add a few tablespoons of olive oil to a large skillet and cook the fish on medium heat. The fish should be barely translucent when cooked. Second, thinly slice the cabbage and avocado. Sprinkle the cabbage with cider vinegar and salt for flavor. Next, place the tortillas on a napkin or paper towel and heat them microwave on high for 20 to 25 seconds. This will absorb the moisture. Finally, assemble your tacos.

If you’re inviting guests over, it may be fun to spread out all the ingredients and let them make their own tacos!
