Our guests at Sunscape Resorts & Spas rave about our fish tacos. That’s why we wanted to share this quick recipe with you so you can make this yummy dish at home. We guarantee they’ll be a crowd pleaser!
1 lb fresh fish fillets (Cod, Mahi Mahi or any other white fish)
Salt and Pepper
1 dozen corn tortillas
Salsa (homemade or store bought)
Soak the fish in cold water for one minute then pat dry with a paper towel. Add a few tablespoons of olive oil to a large skillet and cook the fish on medium heat. The fish should be barely translucent when cooked. Second, thinly slice the cabbage and avocado. Sprinkle the cabbage with cider vinegar and salt for flavor. Next, place the tortillas on a napkin or paper towel and heat them microwave on high for 20 to 25 seconds. This will absorb the moisture. Finally, assemble your tacos.
